Friday Favorites- Cous Cous Salad

It's that time....Friday Favorites! Have I mentioned I'm on Weight Watchers? Maybe I'm trying not to think about it. But I did find a favorite meal that I make almost every day for lunch. It's super filling but tastes fresh and light. Cous Cous salad, tahdah!
Here is my beautiful picture of Cous Cous. I have since changed to whole wheat. I make one serving and I love it because it is so quick to make.
Now for the freshness...I add tomato,cucumber,parsley,red onion,feta cheese & croutons.
Instead of dressing, I just add lime juice. That's really all you need because the other ingredients add so much flavor.

Mix it all together and you're done! You can eat it right away or keep it in the fridge for later. For anyone who needs it, it's about 9 points. What is your favorite thing today?

I love couscous salad!! I love it with a little balsamic vinegar mixed in too! Have a great weekend :)

That sounds delicious. I've never tried cous-cous... call me crazy, I KNOW :) I'll have to try this recipe for sure!
