Chicken Pot Pie & Mama Pig

I've been threatening to post my favorite Chicken Pot Pie recipe. And here it is...

Hello fresh veggies, I feel healthier just looking at you!

1 cup chopped onions
1/2 cup chopped celery
2 cups diced potatoes
1 cup diced carrots
1 cup frozen corn
6 Tbls. butter
6 Tbls flour
2 cups chicken stock
1 cup half & half or milk
salt & pepper
2-3 chicken breasts cooked (I just boil the breasts & cut into bite size pieces).

Preheat oven to 400 degrees & grease a 9 in. pie dish or 9x9x2 square dish.

In a large saute pan, melt the butter. Add the potatoes and carrots and saute for a few minutes.
Then add all remaining veggies except corn and cook a few more3 minutes. 
Stir in the flour and cook another 3-4 minutes until all the flour is cooked in.

Stir in the chicken stock and bring up to a boil. Reduce and simmer about 4-5 minutes until the sauce thickens. 
Stir in half and half (or if you're like me and never have that, use milk) and cook another few minutes.
Stir in chicken and corn and season with salt & pepper.

Line the baking dish with one of the pie crusts, pour in the filling and then cover with second crust(did I really need to tell you that part?). Crimp the edges.

Here is a secret...but of course I trust you not to tell anyone...I don't make my own pie crust. I buy this and it's easy and delicious.

Bake for 25-30 minutes. Let cool for 5.

My entire family LOVES this and it's a whole meal all in one. So easy! I'd love to hear about it if you try it.

Now just for fun I thought I'd share a picture of J. This is from a play of "The 3 Little Pigs" she did at school. She was mama pig and she did fantastic. I was actually amazed at her confidence in front of an audience, a trait she must get from her Dad.

I just had chicken pot pie for dinner last night! It's such a comfort food and totally reminds me of my childhood {my mothers go to dinner when dad was out of town}.

I've made the pie crust, and really, unless you're trying to impress, its not worth it. I love me some Pillsbury pie crust. Yummy looking cpp, too!
