Chicken Rolls with Spinach & Potatoes
Ingredients:
4{or in my case 6} chicken breast fillets
proscuitto {1 slice per chicken fillet}
provolone cheese {1 slice per chicken fillet}
fresh sage {chopped}
baby bella muchrooms
olive oil
butter
salt & pepper
flour
2 C chicken stock
spinach
garlic
red potatoes
oregano
Heat oven to 350. Cut potatoes into 1 inch bites. In a bowl, coat potatoes with olive oil, salt, pepper, and oregano. Roast for 45 mintues or until they have a nice crispy crust.
Lay out chicken fillets, add salt and pepper. Lay one slice of proscuitto, one slice of provolone cheese and chopped sage to taste.
Roll chicken and secure with tooth picks or or cooking twine.
Roll chicken in flour and add to hot pan coated with olive oil. Cook 3-4 minutes on each side to brown. Place chicken in oven at 350 and cook an additional 15 minutes.
While chicken is baking add 2 Tblsp butter to hot pan and add chopped muchrooms. Cook 3 minutes until mushrooms are soft. Add 2 Tblsp flour and cook creating a rough. Slowly add chicken stock and stir until you have gravy. Salt and pepper to taste.
In a seperate pan heat 1 Tblsp olive oil, add garlic {keep it moving so it doesn't burn. Add spinach a bit at a time to cook.
Voila! What I love about this is you can really adjust it to your tastes. You can use any kind of cheese or herb you like. Hope your family enjoys it as much as mine does.

mmmmm...I WILL be trying this. In prep for school starting and my first few weeks of teaching, Ive already planned out my first few weeks of recipes. I can tell you there will be alot of crock pot cookin and yummy,easy dinners(but homemade of course). This looks like a winner!

I think I am totally trying this recipe this week. Minus the mushrooms because I am not a fan. I have never been able to get passed the texture. I wonder what else could be used instead?
